Job Requirements
- Minimum five years of experience in Food & Beverage culinary operations
- At least two years of managing personnel experience
- Able to obtain a valid Racing License and any applicable health certifications
- Willingness to work flexible hours and handle high pressure deadlines
- Ability to maintain interpersonal working relationships
- Commitment to enforcing safety and health regulations
- Strong leadership and management skills
Job Qualifications
- Minimum five years of experience in Food & Beverage culinary operations
- At least two years of managing personnel experience
- A 4-year degree in a related field or equivalent work experience preferred
- Ability to obtain valid Racing License and applicable health certifications

Job Duties
- Manage all areas within Food & Beverage Back of House
- Oversee kitchen stewards, cooks, and lead cooks
- Conduct interviews and participate in hiring, coaching, retention and termination
- Review staffing levels and delegate duties
- Enforce company policies, safety and health regulations
- Improve service execution, ticket times, and production schedules
- Control food costs including purchasing, storage, portion control, and waste control
- Assist with maintenance schedules for kitchen equipment
- Develop budgets and business plans
- Coordinate menu planning and pricing
- Collaborate with Marketing for events and promotions
- Maintain relationships with management and vendors
