Job Requirements

  • Minimum five years of experience in Food & Beverage culinary operations
  • At least two years of managing personnel experience
  • Able to obtain a valid Racing License and any applicable health certifications
  • Willingness to work flexible hours and handle high pressure deadlines
  • Ability to maintain interpersonal working relationships
  • Commitment to enforcing safety and health regulations
  • Strong leadership and management skills

Job Qualifications

  • Minimum five years of experience in Food & Beverage culinary operations
  • At least two years of managing personnel experience
  • A 4-year degree in a related field or equivalent work experience preferred
  • Ability to obtain valid Racing License and applicable health certifications
  • Strong management abilities

  • Creative problem-solving skills
  • Effective oral and written communication skills

Job Duties

  • Manage all areas within Food & Beverage Back of House
  • Oversee kitchen stewards, cooks, and lead cooks
  • Conduct interviews and participate in hiring, coaching, retention and termination
  • Review staffing levels and delegate duties
  • Enforce company policies, safety and health regulations
  • Improve service execution, ticket times, and production schedules
  • Control food costs including purchasing, storage, portion control, and waste control
  • Assist with maintenance schedules for kitchen equipment
  • Develop budgets and business plans
  • Coordinate menu planning and pricing
  • Collaborate with Marketing for events and promotions
  • Maintain relationships with management and vendors
