Job Requirements
- Two to four-year college degree or equivalent education or experience
- minimum of five years culinary experience in a related position
- hotel experience preferred
- advanced knowledge of business and management principles and practices
- excellent oral, written and presentation skills
- ability to delegate, manage manpower and organize complex projects
- ability to establish priorities consistent with department and hotel objectives
- effective listening skills
- ability to operate department within foundation document guidelines
- professional and positive communication with guests and associates

Job Duties
- Manage the human resources objectives in the production and preparation areas of the kitchen to attract, retain and motivate associates while providing a safe work environment
- interview, hire, schedule, train, develop, empower, coach and counsel, recommend and conduct performance and salary reviews, provide open communication vehicles, recommend discipline and termination as appropriate
- plan menus by consulting with chefs
- estimate food costs and profits
- adjust menus
- monitor budgets and payroll records and review financial transactions to ensure expenditures are authorized and budgeted
- develop, recommend, implement and manage department budgets
- analyze, forecast, monitor and control labor and food costs to meet and exceed management and budget objectives
- maintain safe, secure and healthy environment by enforcing sanitation standards and procedures
- supervise maintenance of restaurant equipment to protect assets and comply with legal regulations
- schedule and manage maintenance and sanitation of kitchen and related areas
- manage daily production, preparation and presentation of all food for hotel outlets to ensure quality and consistency
- develop and implement menus and backup procedures to improve revenues and profit margins
- monitor, analyze and control all labor and food costs
- prepare reports, charts and schedules to ensure budget compliance
- promote the accident prevention program
- perform manager-on-duty functions and shifts as assigned
