Job Requirements

  • High school diploma or GED
  • culinary degree or equivalent preferred
  • at least 4 years of related experience and or training as a sous chef in a food service operation with sales over $4M
  • proficiency with Microsoft Excel, Word, PowerPoint, and Outlook
  • possession of ServSafe and or San Diego County Food Handlers Manager Card
  • occasional travel to events and other bistro locations

  • proficiency with Microsoft Excel, Word, PowerPoint, and Outlook

  • strong leadership and communication skills
  • experience with inventory management and food cost control
  • ability to train and mentor kitchen staff
  • knowledge of health and safety regulations
  • experience supporting event food services
  • flexibility to travel occasionally

Job Duties

  • Lead, train, guide, delegate, and support all kitchen team members
  • oversee preparation of various meats, seafood, poultry, vegetables, and other food items using kitchen equipment
  • supervise shifts by effectively communicating labor and service needs and updates with other managers and teams
  • assist management with recruiting and onboarding as appropriate
  • conduct regular development, coaching, and performance feedback
  • ensure all recipes and standards adhere to company expectations
  • maintain food pars, inventory, and product rotation
  • lead teams to complete all opening and closing duties to standards
  • collaborate with kitchen team and event crew to deliver exceptional fan experience
  • support event chef with menu specifications and execution
  • train team members on skills for all kitchen stations
  • comply with health, sanitation, and safety regulations
  • maintain clean and sanitary workstations
  • ensure quality, accuracy, timeliness, and consistency of menu items
  • collaborate on ordering and requisition of food products
  • monitor vendor product quality and report issues
  • maintain proper food storage, labeling, and inventory levels
  • minimize food waste and shrinkage through monitoring
  • create a motivational environment with open communication
