Job Requirements

  • High school diploma or equivalent
  • prior experience in culinary or food service industry

Job Qualifications

  • culinary school training or equivalent experience preferred
  • prior experience in a supervisory culinary role

Job Duties

  • Creates and maintains a pleasant and inviting dining experience
  • uses creativity and innovation in performing culinary duties
  • assists with menu development by consulting with residents and dieticians and submits menus for review and approval
  • aids in planning, developing, and communicating/posting menus
  • prepares and oversees the preparation of food to be ready for service at specified times
  • monitors and enforces temperature recording by staff
  • recommends substitutions if necessary and communicates any menu changes
  • ensures consistent quality in taste, plating, and presentation of food and beverages
  • develops and follows recipes for inventory control
  • completes inventory responsibilities at least monthly
  • reviews deliveries to ensure all ordered items and offered items are present
  • oversees food preparation for special events
  • assists with budget development and department P/L monitoring
  • ensures consistent quality standards for sanitation and safety (UCH, ODH, OSHA)
  • assists with SDS updating and training
  • ensures proper equipment operation and maintenance
  • reviews and submits invoices to Accounts Payable and operates within budget
  • assists in hiring, terminations, supervises cooks and dining services assistants
  • assists with orientation and training of department staff
  • monitors staff performance and completes corrective actions or counseling if necessary
  • completes regular performance appraisals
  • conducts safety training and ensures department safety practices
  • serves on dining committee and other committees as required
  • performs other duties as assigned or directed
  • operates kitchen utensils and equipment like blenders, mixers, grinders, slicers, tenderizers
  • bakes, roasts, broils, and steams food items for consumption
  • washes, peels, cuts, shreds vegetables and fruits
  • meets meal schedules
  • serves meals according to portion control
  • slices portions of meat for individual servings
  • adds gravies, sauces, garnishes
  • checks meal trays for accuracy before leaving kitchen
  • maintains dining services according to rules and regulations
  • directs and assists in daily and scheduled cleaning duties
  • stores food properly using knowledge of temperature requirements, spoilage, and sanitation
  • staffs the department with capable people, plans work with regard for skills
  • ensures employees are oriented, trained, and encouraged to develop skills and self-confidence
  • oversees special catering events
