Job Requirements
- High school completion or equivalent level of education and experience
- Must thrive in a multi-tasking, fast paced working environment

Job Duties
- Manage the kitchen staff, ensuring quality preparation of all menu items and proper handling of food items in accordance with safety standards
- Estimate food consumption and requisition or purchase foodstuffs
- Receive and check foodstuffs and supplies for quality and quantity
- Coordinate the purchase of all food and develop menus for all outlets while maintaining approved food and labor costs
- Select and develop recipes
- Supervise personnel involved in preparing, cooking and serving
- Cook and prepare food according to recipes
- Cut, trim, bone and carve meat and poultry for cooking
- Portion cooked foods and give instructions on portion sizes and garnishing methods
- Oversee expediting of breakfast, lunch and dinner shifts to ensure standards are met
- Train, counsel and motivate kitchen teams while controlling production, quality and food costs
- Maintain time and payroll records including scheduling staff appropriately
- Assist in supervising utility and receiving staff for cleanliness of storage and kitchen areas
- Ensure all employees maintain food handler’s certification and comply with health department regulations
- Supervise daily detailed cleaning of the kitchen and ensure sanitation throughout the property including dining rooms and public areas
- Support and adhere to the company’s core values and guest service philosophy
- Perform other duties as assigned to meet business needs
