Job Requirements
- High school diploma or equivalent
- minimum 4 years of progressive culinary experience or culinary degree with 2 years of relevant experience
- knowledge of food preparation, sanitation and safety standards
- ability to follow health department rules and liquor regulations
- capability to work flexible and long hours
- physical ability to lift up to 50 pounds occasionally

Job Qualifications
- At least 4 years of related progressive experience or a culinary graduate with at least 2 years of progressive experience in a hotel or a related field
- knowledge of food and beverage preparation techniques, health department regulations, and liquor laws
- ability to work long hours
- capable of exerting medium work involving lifting up to 50 pounds occasionally
- must maintain a warm and friendly demeanor
- effective verbal and written communication skills across all employee and guest levels
- adept at listening, understanding, and clarifying employee and guest concerns
- strong multitasking and prioritization abilities
- service-oriented and courteous approach in all interactions
- participation in required hotel meetings and trainings
- ability to cover Manager on Duty shifts as needed
- consistent attendance per Highgate’s scheduling standards
- high standards of personal appearance and grooming including wearing nametags

Job Duties
- Work with other F&B managers and keep them informed of F&B issues as they arise
- keep immediate supervisor fully informed of all problems or matters requiring attention
- coordinate and monitor all phases of Loss Prevention in kitchen areas
- prepare and submit required reports in a timely manner
- monitor quality of all food product and presentation
- ensure preparation of required reports including wage progress, payroll, revenue, employee schedules, quarterly action plans
- oversee all aspects of daily kitchen and food production operations
- make cooks aware of daily forecasts and customer counts to ensure timely food service
- respond to guest complaints in a timely manner
- ensure compliance with SOPs in all outlets
- ensure compliance with requisition procedures
- conduct staff performance reviews according to Highgate standards
- implement and monitor corporate promotions in food outlets
- ensure adherence to local health department sanitation laws
- compute daily food costs
- work with Director of F&B to create and implement menus
- assess food portion size, visual appeal, taste, and temperature
- check all stations at shift end for food storage and sanitation
- check food purchases for proper ordering, quality, and pricing
- oversee daily preparation, sanitation, inventory receiving, report logging and food cost reporting
- prepare daily food production sheets
- cut meat, poultry, seafood according to daily business needs
