Job Requirements
- Three years sous chef or comparable experience in a full service and high volume restaurant
- ServSafe certification
- strong knowledge of proper food handling and sanitation standards
- ability to manage and lead a team of up to 75 people
- excellent communication skills
- ability to work nights, weekends, and 12+ hour shifts as necessary
- ability to adapt to a changing environment
- strong work ethic and professionalism
- experience with back office and POS systems
- culinary arts degree is a plus
- bilingual is a plus

Job Duties
- Coordinate, lead, and direct line cooks, prep cooks, and utility team members
- train and validate all new cooks and provide ongoing training and coaching to existing cooks
- partner with the Executive Chef, GM, and FOH managers on team training and education
- ensure 100% recipe adherence by all team members
- hold team accountability to company policies and procedures
- implement and maintain strict safety and sanitation standards as well as overall kitchen organization
- lead the implementation of a HACCP plan and ensure all team members follow it
- keep clear communication lines with the Executive Chef, GM, and corporate chef
- assist the Executive Chef in managing food costs to goal
- manage controllable costs to goal
- assist with back office accounting and scheduling systems
- perform accurate inventories and communicate food cost issues
- perform line and quality checks to ensure food quality and equipment functionality
- uphold proper image and appearance guidelines including hygiene
