Job Requirements

  • Degree or certification from an accredited culinary arts institute or apprenticeship certification from the American Culinary Federation
  • three to five years of experience as an executive sous chef in a high-volume food industry
  • excellent managerial skills
  • knowledge of kitchen sanitation and equipment operation
  • proficiency in Microsoft Office applications
  • flexibility to work nights, weekends and holidays
  • ability to travel as required

Job Qualifications

  • proven track record in improving kitchen efficiencies, quality, food and labor costs
  • excellent managerial, financial analysis, team building and communication skills
  • knowledge of kitchen sanitation, operation and maintenance of kitchen equipment
  • detail-oriented and extremely organized
  • ability to learn new programs and procedures quickly
  • proficiency in Microsoft Word, Excel and PowerPoint
  • flexibility to work extended hours including nights, weekends and holidays
  • willingness to provide short-term support to other facilities in emergencies
  • ability to travel as required

Job Duties

  • Manage day-to-day operations of all food outlet kitchens with a people and product focus
  • implement and enforce departmental and organizational policies and procedures
  • assure staff compliance with all standards, policies and procedures
  • plan and schedule work assignments and performance development for associates
  • administer corrective counseling, training, and appraisals
  • manage payroll accountability
  • plan innovative menus and maintain financial responsibility for menu mix
  • analyze menu and food costs and prepare cost and quality efficient menus and specials
  • prepare reports regarding food and menu analysis
  • prepare cost-saving annual budgets and ensure fiscal responsibilities are met
  • oversee inventory management, perform periodic inventory, requisition and purchasing
  • maintain effective vendor relationships
  • oversee sanitation standards to comply with local health and company standards
  • directly interact with high level clients
  • perform related duties as assigned by management
