Job Requirements
- High school diploma
- Minimum three years lead experience as Sous Chef or similar
- Ability to obtain sanitation certification within 6 months if not current
- Safe Food Handling certification
- Experience managing high-volume, fast-paced kitchens
- Knowledge of food safety regulations and kitchen sanitation
- Proficiency in multiple cooking stations and methods
- Strong leadership and communication skills
- Ability to work flexible hours including nights, weekends, and holidays
- Physical ability to lift up to 50 pounds
- Standing for extended periods and working in temperature-varied environments
- Attention to detail and manual dexterity
Job Qualifications
- High school diploma
- Culinary arts degree preferred
- Current and approved sanitation certification or ability to obtain within 6 months
- Safe Food Handling certification
- Minimum of three years lead experience as Sous Chef or equivalent
- Over 5 years' experience managing high-volume commercial kitchens
- Experience in fine dining cooking and culinary leadership preferred
- Proficient in various kitchen stations and cooking methods
- Advanced knife skills
- Competent in inventory ordering and waste management
- Skilled in recipe production
- Ability to operate multiple stations including sauté, grill, salad, and fry
- Strong problem-solving and creativity under pressure
- Knowledge of current culinary trends and food presentation
- Highly organized with excellent time management
- Proficient in computer use for purchasing and inventory management
- Excellent leadership and staff management capabilities
- Strong mathematical skills for business needs
- Effective communication with managers, staff, and guests
- Flexible availability including nights, weekends, and holidays
Job Duties
- Oversee daily culinary operations and supervise production of daily specials
- Delegate tasks and spot-check product quality
- Assist on the line during peak service times
- Assist the Executive Chef with planning, ordering, inventory, and food preparation
- Assume full responsibility of culinary operations in the Executive Chef's absence
- Assist with menu development and implementation including daily and weekly specials and special event menus
- Ensure high-quality food preparation and presentation
- Maintain standards for quality, cost, appearance, and flavor
- Monitor holding, storage, and food rotation and ensure sanitation standards
- Support cost controls and procurement of kitchen equipment and supplies
- Resolve issues and manage problematic situations
- Prepare and serve therapeutic diet foods according to planned menus
- Assist in serving meals following dietary preferences and proper portions
- Participate in planning and preparing special occasions and themed meals
- Assist in food preparation, portioning, garnishing, presentation, and safe storage
- Estimate food consumption for purchasing and provide recipe standards
- Act as liaison between Executive Chef and back of house staff
- Conduct pre and post shift walkthroughs for compliance with station management and inventory
- Enforce food safety policies and procedures
- Ensure compliance with all federal, state, and local regulations
- Establish a safe work environment through training and equipment maintenance
- Promote and comply with policies regarding residents' rights
- Follow procedures for hazardous materials and fire safety and report hazards
- Maintain sanitation and food safety procedures including hygiene and documentation
- Ensure proper storage of food and adherence to cleaning schedules
- Keep kitchen and storage facilities sanitary, neat, and organized
- Attend required in-services and trainings
