Job Requirements
- Must be able to stand, walk, and perform physical activities for extended periods
- Ability to work in varying temperatures and environments with potential exposure to dust, fumes, or gases
- Capable of climbing ladders, squatting, kneeling, reaching, grasping, twisting, bending, and folding/unfolding
- Able to lift, carry, push, and pull up to 100 lbs occasionally
- Effective communication skills including talking and hearing with sufficient visual acuity
- Willingness to work additional hours, weekends, and holidays as needed
Job Qualifications
- High school diploma or equivalent
- Minimum of 2 years of experience as a Sous Chef or similar culinary role
- Valid Health and Sanitation certification such as ServeSafe
- Strong communication skills
- Ability to manage and train kitchen staff
- Experience with menu development and food production management
- Knowledge of health and safety regulations in a kitchen environment
Job Duties
- Ensure proper preparation, presentation, and excellence of all food products, overseeing ala carte dining, employee meals, and private dining rooms
- Expedite meal periods ensuring quality, portioning, and presentation
- Assist in menu development for ala carte, banquet menus, and special requests
- Hire, train, supervise, and manage kitchen staff performance
- Prepare work schedules, monitor payroll costs and ADP reports
- Attend Food & Beverage meetings, banquet BEO meetings, and line-ups
- Determine budgetary requirements and control expenses related to food and kitchen supplies
- Analyze food and labor production reports to supervise and control costs
- Oversee procurement, receiving, and rotation of food supplies and manage inventories
- Adhere to cleaning schedules and ensure kitchen cleanliness and sanitation
- Maintain compliance with all health, safety, and sanitation regulations
- Interact professionally with members and guests, accommodating changes and requests
- Support team environment and assist in delivering service excellence
- Address and resolve member and guest complaints professionally
- Complete additional duties as assigned by management
