Job Requirements
- High school diploma or equivalent
- Minimum 5 years of culinary experience, including line cook and supervisory roles
- At least 6 months experience in kitchen management
- Strong physical stamina and ability to lift heavy objects
- Proficiency with computer systems and email
- Ability to work long standing shifts
- Effective communication skills
- Knowledge of safety and sanitation regulations
- Ability to train and develop kitchen staff
Job Qualifications
- Minimum 5 years of experience in varied kitchen positions including food preparation, line cook, fry cook and expediter
- At least 6 months experience in a similar managerial capacity
- Strong communication skills with managers, kitchen and dining room personnel, and guests
- Ability to reach, bend, stoop and frequently lift up to 50 pounds
- Ability to stand for long periods (up to 9 hours)
- Proficient with computer and email
- Knowledge of food safety, sanitation, and labor cost control practices
- Experience with inventory management and food cost maintenance
Job Duties
- Manage all kitchen functions including food purchasing, costing, and preparation
- Maintain quality standards, sanitation and cleanliness
- Train employees in cooking methods, plate presentation, portion and cost control
- Work with Executive Chef on menu planning and recipe execution
- Ensure accurate ordering and receiving of products according to specifications
- Maintain target food cost and control waste
- Conduct weekly, bi-period, and period-end inventories
- Oversee cleanliness and safety standards in the kitchen
- Manage employee hiring, evaluation, and discipline
- Provide culinary training and development for kitchen staff
- Monitor labor cost and ensure compliance with payroll procedures
- Organize and monitor kitchen equipment maintenance and safety
- Conduct safety training including first aid, CPR, and handling hazardous materials
- Maintain proper food holding and refrigeration temperature controls
