Job Requirements
- Must have culinary diploma or equivalent
- Minimum 2 years experience in hotel or related culinary field
- Knowledge of food safety regulations
- Ability to work flexible hours including weekends and holidays
- Strong leadership and team management skills
- Excellent communication and interpersonal skills
- Capable of standing for long periods and performing physical kitchen tasks

Job Qualifications
- At least 4 years of related progressive experience or culinary graduate with 2 years of progressive experience in hotel or related field
- Knowledge of F&B preparation techniques, health department rules, liquor laws and regulations
- Ability to work long hours
- Capable of medium work requiring exertion up to 50 pounds occasionally
- Maintain warm and friendly demeanor
- Effective communication skills both verbal and written with employees and guests
- Ability to listen, understand, and clarify concerns
- Able to multitask and prioritize departmental functions to meet deadlines
- Attend all hotel required meetings and trainings
- Participate in M.O.D. coverage as required
- Maintain regular attendance and comply with scheduling
- Uphold high standards of personal appearance and grooming
- Comply with hotel standards and regulations
- Able to identify problem areas and assist in solutions
- Proficient in handling problems including anticipating, preventing, identifying and solving them
- Ability to evaluate complex information to meet objectives

Job Duties
- Work with other F&B managers and keep them informed of F&B issues as they arise
- Keep immediate supervisor fully informed of all problems or matters requiring his/her attention
- Coordinate and monitor all phases of Loss Prevention in kitchen areas
- Prepare and submit required reports in a timely manner
- Monitor quality of all food product and presentation
- Ensure preparation of required reports including wage progress, payroll, revenue, employee schedules, and quarterly action plans
- Oversee all aspects of daily operation of the kitchen and food production areas including hot food, bakery, and pantry
- Make cooks aware of daily forecasts and customer counts to prepare food on time
- Respond to guest complaints in a timely manner
- Ensure compliance with SOPs in all outlets
- Ensure compliance with requisition procedures
- Conduct staff performance reviews according to Highgate Hotel standards
- Implement and monitor corporate promotions including buffet and three-meal concepts
- Enforce local health department sanitation laws
- Compute daily food cost
- Work with Director of F&B to create and implement menus
- Assess food portion size, visual appeal, taste, and temperature
- Check all stations at the end of shifts for food storage and sanitation
- Check food purchases for proper ordering, quality, and price structure
- Oversee daily activities such as food preparation, sanitation, inventories, log-on reports, and food cost reports
- Prepare daily food production sheets
- Cut meat, poultry, seafood according to daily business
