Job Requirements

Job Duties

  • Promote, work, and act consistent with the mission of the Waterway
  • Maintain appropriate cleaning schedules for kitchen floors, mats, walls, hoods, equipment, and food storage areas
  • Monitor sanitation practices ensuring compliance with standards and regulations
  • Check quality of raw or cooked food products to meet standards
  • Maintain proper food holding and refrigeration temperature control
  • Estimate amounts and costs of required supplies including food and ingredients
  • Control food cost and usage through proper requisition, storage, recipes, and waste control
  • Instruct cooks and kitchen staff on preparation, cooking, garnishing, and presentation
  • Collaborate with restaurant managers to plan and price menu items, establish portion sizes, and prepare recipes
  • Supervise activities of kitchen staff involved in food preparation
  • Ensure consistent preparation and serving according to recipes and standards
  • Schedule kitchen personnel to meet business needs and labor cost targets
  • Inspect supplies, equipment, and work areas for standard compliance
  • Order and requisition food, equipment, and supplies required for efficient operations
  • Verify orders meet predetermined specifications and unit counts
  • Ensure deliveries comply with receiving policies and procedures
  • Determine production schedules and staff needs to ensure timely service
  • Check quantity and quality of incoming products
  • Create decorative food displays and determine food presentation
  • Plan, direct, or supervise food preparation across multiple kitchens or restaurants
  • Coordinate planning, budgeting, and purchasing for food operations
  • Analyze recipes to assign menu item prices based on food, labor, and overhead costs
  • Prepare and cook foods regularly or for special functions
  • Negotiate prices and order supplies with sales representatives
  • Make hiring, promotion, evaluation, and disciplinary decisions for kitchen personnel
  • Ensure performance appraisal and personnel policies compliance
  • Provide orientation and continuous training on kitchen equipment, cleanliness, safety, and procedures
  • Collaborate in developing recipes and menus considering seasonal and guest factors
  • Demonstrate new cooking techniques or equipment to staff
  • Maintain equipment cleanliness and operational condition
  • Meet with guests for menu discussions on special occasions
  • Prepare required paperwork such as reports and schedules
  • Attend employee meetings and offer operational improvement suggestions
  • Assist fellow employees to meet guest needs and support restaurant operations
  • Fill in for employees as needed to maintain service standards and operations
