Job Requirements
- High school diploma or equivalent
- Twelve to fifteen years experience in kitchen covering all aspects of cooking
- Proficient in English language reading, writing and speaking
- Ability to stand for prolonged periods and walk
- Capability to lift up to 50lbs
- Exposure to extreme temperatures
- Strong leadership and communication skills
- Experience in kitchen administration
- Ability to supervise and train kitchen personnel
Job Qualifications
- Reading, writing and oral proficiency in the English language
- Very advanced courses or experience in kitchen administration
- Twelve to fifteen years experience in kitchen covering all aspects of cooking
- High level of creativity and high quality standards
- Strong leadership, communication and training skills
Job Duties
- Ensure correct preparation and presentation of all food items
- Plan and develop menus considering product availability, service cost, and marketing
- Assign prices for menu items for profitability
- Prepare and post employee work schedules and payroll
- Supervise food preparation, cooking methods, portion sizes, garnishing, and presentation
- Coordinate and supervise ordering of food supplies and kitchen equipment
- Hire, train, discipline, supervise and organize all kitchen personnel
- Provide performance evaluations and recommend salary increases
- Conduct regular meetings with kitchen staff
- Maintain high levels of employee morale and motivation
- Coordinate special functions with Executive Chef and other managers
- Supervise maintenance and cleanliness of food preparation equipment
- Develop and ensure a safe working environment
- Set up control systems for quality and portion consistency
- Create purchasing specifications
- Monitor operating criteria and food quality
- Review food presentations and recommend changes
- Communicate regularly with Executive Chef
- Supervise stewarding department duties
- Monitor employee cafeteria quality and menu variety
- Communicate with purchasing department for quality and pricing
- Respond to hotel emergency or safety situations
- Perform other tasks as assigned by management
