Job Requirements

  • Associate's degree in culinary arts, baking and pastry, culinary management or related field preferred
  • Cooking and production experience required
  • Certified Food Protection Manager (CFPM) or Food Service Sanitation Manager (FSSM) Certification required
  • Basic computer skills including Microsoft Excel and Word
  • Ability to communicate clearly with managers and kitchen personnel
  • Ability to actively supervise, motivate and correct employee performance
  • Ability to work well with limited supervision
  • Bilingual English-Spanish preferred
  • Must be aware of local, state and federal health and sanitation laws
  • Ability to speak, read, and understand basic cooking directions
  • Ability to use basic math including addition, subtraction, multiplication, and division
  • Must be able to lift and/or move up to 50 pounds
  • Ability to maintain a safe and sanitary kitchen environment

Job Qualifications

  • Must be committed to maintaining food and beverage knowledge and quality service
  • Must have cooking and production experience
  • Must be aware of local, state and federal health and sanitation laws
  • Must hold a current Certified Food Protection Manager (CFPM) or Food Service Sanitation Manager (FSSM) Certification
  • Must have basic computer skills, including but not limited to Microsoft Excel and Microsoft Word
  • Must be able to speak, read, and understand basic cooking directions
  • Must be able to use basic math, including but not limited to addition, subtraction, multiplication, and division

Job Duties

  • Ensure that all recipes and prepared meals meet the district's specifications and commitment to quality
  • Maintain a safe, orderly and sanitized kitchen by using proper food-handling techniques
  • Prepare daily production sheets
  • Prepare monthly inventory
  • Rotate daily par stock using the first-in, first-out (FIFO) method
  • Maintain daily Hazard Analysis and Critical Control Points (HACCP) forms
  • Ensure that all stations remain stocked before and during each meal period
  • Verify that all recipes are followed and correct portions are served
  • Keep kitchen, dish, and storage areas cleaned and organized
  • Order food and supplies as directed
  • Maintain checkbook daily to properly manage district funds
  • Train employees to district standards
  • Set excellent work and service examples
  • Actively participate in cleaning and meal preparation as necessary
  • Manage staffing levels throughout shift
  • Balance the cash drawer and complete necessary paperwork at close of the day
  • Ensure the adequate amount of change daily for the cash drawer
  • Set up stations according to restaurant guidelines
  • Maintain a clean and sanitary work station/kitchen area including tables, shelves, grills, broilers, fryers, sauté burners, steamer, convection oven, flat-top range, dry storage and refrigeration/freezer equipment
  • Open and close the kitchen properly and follow the checklist
  • Attend all scheduled staff meetings and bring suggestions for improvement
  • Perform additional responsibilities as assigned
