Job Requirements

  • Current First Aid/CPR certification required
  • valid US Passport required
  • STCW Basic Safety Training required
  • STCW Crowd Management certification required
  • TWIC required
  • compliance with US Coast Guard drug testing and background check requirements
  • fitness for sea duty as determined by physical examination
  • proficiency in English for reading, writing, and oral communication
  • ability to work 12-hour split shifts on a 2 months on 1 month off schedule

Job Qualifications

  • Completion of formal culinary training preferred
  • minimum two years experience in culinary team roles onboard passenger ships preferred
  • strong time management skills
  • ability to handle multiple tasks and meet deadlines
  • ability to act as Head Chef when necessary
  • good supervisory and interpersonal skills
  • effective communication with team members and office personnel
  • capable of interacting with guests to communicate department vision

Job Duties

  • Assists the Head Chef in preparing all guest and crew meals following company menus and recipes
  • participates in cooking breakfast, lunch, and dinner including meat, fish, and vegetarian dishes
  • butchers, preps, portions, and cooks meals as requested by Head Chef
  • assists in training and developing pantry chefs, sous chefs, and galley stewards
  • maintains cleanliness of galley and food storage areas adhering to sanitation and health requirements
  • assists with dishwashing duties when assigned
  • helps load, handle, and properly store food to maintain inventory levels and ensure proper rotation
  • participates in onboard safety training, drills, and meetings including fire, abandon ship, man overboard, flooding, and medical emergencies
  • follows company uniform policy promoting safety and standards
  • participates in shore side training as required
  • maintains knowledge of ISM codes and emergency station duties
