Job Requirements

  • High school diploma or equivalent
  • Previous kitchen or culinary experience preferred
  • Strong communication skills in English
  • Knowledge of food safety and sanitation practices
  • Ability to work flexible schedules including weekends and holidays
  • Capacity to manage multiple tasks in a fast-paced environment
  • Physical stamina to stand for long periods and lift heavy items

Job Duties

  • Responsible for kitchen logistics when chef is absent or assisting chef when he is present
  • Assist with staff food training and the generation of necessary training materials
  • Continually review and manage performance of all culinary staff and share feedback with chef
  • Understand, follow and direct others in current safety procedures
  • Maintain the quality and presentation of food to achieve favorable guest feedback
  • Assist in preparation of dishes while training others for consistency
  • Follow each dish presentation as set by chef and achieve 100% consistency during service
  • Assist in creating new offerings including specials and seasonal menu changes
  • Follow company procedures to ensure proper and accurate food ordering
  • Maintain proper inventory of food items ensuring freshness
  • Assist chef in keeping food cost and labor cost aligned to goals
  • Maintain communication with front of house management
  • Assist chef with menu change proposals including costing and ingredient search
  • Assist chef in following procedures for menu changes and organize tastings for service staff
  • Keep culinary and back of house documentation up to date including job duties, checklists, recipe book and personnel forms
  • Attend meetings requested by chef or front of house managers
  • Check company outlook email and participate in reporting
  • Ensure compliance with health department rules to pass inspections
  • Be present in kitchen during service periods scheduled
  • Prepare and cook dishes according to recipes
  • Communicate last minute menu changes and 86 items to front of house
  • Communicate food-related issues to front of house team
  • Introduce and organize tastings of menu changes and daily specials for service staff
  • Maintain current knowledge of foods and ingredients, following local trends
