Job Requirements

  • maintains food quality standards for the restaurant
  • assists executive chef in overseeing all phases of food procurement, production, and service

  • ensures target ticket times are achieved
  • maintains kitchen equipment and storage in clean condition
  • ensures kitchen cleanliness and passes health department audits
  • adheres to food safety, sanitation, and storage practices
  • assists executive chef with sales, revenue, and profitability goals
  • assists with vendor relations and equipment maintenance
  • follows recipes and procedures per company standards
  • completes daily culinary line checks and sanitation checks
  • communicates with leaders, team members, and guests
  • performs all management duties as needed
  • regularly counsels and coaches staff
  • assists with formal staff evaluations
  • executes and trains company systems
  • trains and motivates team members
  • ensures a safe and harassment-free workplace
  • takes responsible action to solve problems
  • performs physical tasks including standing, walking, bending, lifting up to 50 lbs
  • reads and writes English to process paperwork
  • comfortable working in extreme temperatures

Job Qualifications

  • two years of kitchen or culinary management experience at a full-service, upscale restaurant concept
  • excellent leadership and communication skills
  • knowledge of food safety, sanitation, and storage practices
  • ability to train, develop, and motivate team members
  • strong organizational and time management skills
  • proficiency in following recipes and procedures
  • ability to maintain kitchen cleanliness and equipment
  • ability to counsel and coach team members effectively

Job Duties

  • maintains food quality standards for the restaurant
  • assists executive chef in overseeing all phases of food procurement, production, and service, including inventory and ordering, storage and rotation, food preparation, recipe adherence, plate presentation, and service and production time standards
  • fills in for the executive chef in planning and directing food preparation when necessary
  • ensures that clear feedback is provided to the entire kitchen team, including staff and management
  • conducts daily pre-service meetings
  • provides immediate feedback to staff on food quality, execution, and presentation as items are produced and serves as a last line of defense against substandard quality items
  • ensures that target ticket times are consistently achieved while maintaining food quality standards
