Job Requirements
- Have three or more years of progressive experience in hotel Food and Beverage operations or culinary degree with two or more years of experience
- Experience in high volume catering with hotel top brands and fine dining
- Proven leadership and managerial skills
- Ability to support colleague growth and interdepartmental teamwork
- Current on culinary trends
- Highly creative with strong service skills
- Computer literate

Job Duties
- Direct and supervise efficient operation of food production areas
- Supervise and assist in preparation of all food items based on standardized recipes
- Maintain cleanliness, sanitation and safety in kitchen, work and storage areas
- Minimize waste and maximize cost/production ratio
- Expedite peak meal periods with a hands-on approach
- Monitor food outlets, buffets, stations and food displays for creativity, quality, cleanliness and food safety
- Schedule well-trained cooks in proper uniform
- Assist Outlet-Restaurant and Banquet Managers in daily and weekly duties
- Support food and beverage services for conventions and group activities
- Coordinate with other hotel departments to facilitate services
- Work with Food and Beverage Department to improve practices and services
- Achieve departmental objectives and goals
- Manage food cost budget and control waste
- Oversee menu creation for staff restaurant
- Promote teamwork within Kitchen department and strong interdepartmental relationships
- Participate in media and community opportunities to promote hotel
- Ensure adherence to municipal and state laws on hygiene and security
- Respond to food-related feedback and ensure proper reporting
- Maintain kitchen equipment and ensure proper maintenance
- Participate in Department Head and Food & Beverage meetings
- Hold regular departmental communication meetings and support involvement in hotel committees
