Job Requirements

  • High school diploma or equivalent
  • Minimum three years progressive experience in hotel food and beverage or culinary degree with relevant experience
  • Ability to work flexible schedules including evenings, weekends and holidays
  • Strong leadership and team management skills
  • Knowledge of food safety and sanitation standards
  • Excellent communication and interpersonal skills
  • Ability to stand, walk and perform physical tasks for extended periods
  • Must be able to handle high-stress situations in a fast-paced environment

Job Qualifications

  • Three or more years of progressive experience in hotel food and beverage or culinary degree with 2 or more years of progressive hotel food and beverage experience
  • Experienced in high volume catering with top hotel brands and fine dining
  • Proven leadership and managerial skills
  • Strong customer service orientation
  • Current on culinary trends and committed to continuous development
  • Creative with strong service skills
  • Computer literate

Job Duties

  • Direct and supervise the efficient operation of food production areas
  • Supervise and assist in the preparation of all food items based on standardized recipes
  • Ensure cleanliness, sanitation and safety in the kitchen, work and storage areas
  • Monitor food outlets, buffets, stations and food displays for creativity, quality, cleanliness and food safety
  • Expedite peak meal periods with a hands-on approach
  • Schedule and train cooks, ensuring proper uniform
  • Assist Outlet-Restaurant Manager and Banquet Manager in daily and weekly duties
  • Support food and beverage services for conventions and group activities
  • Coordinate with other hotel departments to facilitate agreed services
  • Work within monthly food cost budget, adjust requisitions and control waste
  • Oversee menu creation for staff restaurant to ensure quality
  • Promote teamwork and maintain strong interdepartmental relationships
  • Participate in media and community events to promote the hotel
  • Ensure compliance with hygiene and safety laws
  • Respond personally to food-related feedback
  • Maintain kitchen equipment in good working order
  • Participate in department head and food and beverage meetings
  • Hold regular departmental communication meetings
