Job Requirements
- High school diploma or equivalent
- minimum 1-3 years experience as a Chef or Sous Chef
- minimum 7 years experience as a cook
- knowledge of FDA, USDA, HAACP food safety regulations
- ability to stand and move for shifts over 10 hours
- ability to lift over 25 pounds
- willingness to work rotating schedules over 55 hours per week
- completion of company required training including ServSafe
- compliance with company policies and procedures
Job Qualifications
- Associates degree in Culinary Arts or Culinary Arts certification preferred
- minimum 1-3 years experience as a Chef or Sous Chef
- minimum 7 years experience as a cook
- prior supervisory experience in high volume, manufacturing, food production, restaurant or catering preferred
- in-flight catering or high-volume food service experience preferred
- ability to cook meals according to detailed specifications
- ability to work in fast paced, deadline-driven environment
- strong leadership skills to manage a team of cooks
- labor relations experience a plus
- ability to train others
- comfortable managing employees at all levels and driving positive program changes
- ability to provide positive and negative feedback daily
- excellent time management and multitasking skills
- strong organizational, analytical, communication, and leadership skills
- innovative with ability to improve operations
- menu design experience a plus
- basic computer skills with working knowledge of Microsoft Office preferred
- ServSafe certification preferred
- excellent written and oral communication skills
- bilingual in Spanish a plus
Job Duties
- Ensures food specifications and labor objectives meet company and customer requirements
- supervises department for quality and quantity ensuring compliance with FDA, USDA, HAACP, and other regulations
- manages attendance, paperwork, shift setup, and employee assignments
- orders raw materials from storeroom and produces extra meals as needed
- prepares daily production sheet assigning tasks based on passenger counts
- oversees food preparation after requisition from storeroom and trains employees on proper procedures
- maintains safety procedures and cleanliness throughout shifts
- manages daily production for quality and consistency in hot and cold kitchens
- ensures compliance with wage and hour policies including employee breaks
- trains and monitors employees to maximize productivity while minimizing labor and food costs
- plans daily manpower and schedules employees
- responsible for employee retention and reducing turnover
- coaches, counsels, and prepares corrective actions in compliance with union agreements
- reviews employee cost centers, job titles, and pay rates
- completes all required company training including ServSafe
- complies with company policies and procedures
