Job Qualifications

  • Minimum 2 years kitchen management experience with teams exceeding 15 people per shift in high-end environments
  • experience with banquets, events, or volume-driven concepts
  • ability to lead, train, motivate, and develop staff for guest satisfaction
  • strong critical thinking and problem-solving skills
  • knowledge of whole ingredient preparation and from-scratch cooking techniques including soups, stocks, sauces, butchery, grilling, sautéing, steaming, braising, roasting
  • pastry experience desirable
  • menu development skills including recipe creation, purchasing, and costing
  • arithmetic skills related to recipes, weighing, and measurement conversions
  • computer proficiency including word, excel, and email
  • experience with HR practices including interviewing, hiring, training, mentoring, counseling, and terminating staff
  • ability to work varied schedules including nights, weekends, and holidays
  • stable work history and attendance record
  • positive, friendly, professional attitude
  • ability to take detailed direction and accept professional feedback

Job Duties

  • Manage and direct daily operation of the culinary team
  • uphold standards of excellence, quality, and hospitality
  • prepare fresh, flavorful, consistent, well-executed dishes
  • lead, train, motivate, and develop staff to achieve shared goals and ensure guest satisfaction
  • oversee kitchen cleanliness, walk-ins, cooking and prep equipment, dish washing, and receiving areas
  • coordinate menu development including creation, recipe development, purchasing, and costing
  • ensure proper receiving, storage, and rotation of perishable ingredients and train staff on these processes
  • follow and train team members on recipes, portion controls, pars, and presentation specifics
  • track labor costs, write schedules, and implement labor controls to meet budgets
  • perform supervisory tasks related to health and safety standards and techniques
  • manage multitasking, prioritization, and team management to meet deadlines
  • handle HR responsibilities including interviewing, hiring, training, mentoring, counseling, and terminating staff as needed
  • maintain positive, professional behavior with staff and guests
  • utilize computer skills including word processing, spreadsheets, and email communication
