Job Requirements

  • Minimum of 2 years experience in fine-dining or similar establishment
  • Hold Court of Master Sommeliers Level 1 certification
  • High school diploma or equivalent
  • Fluent in English, both written and spoken
  • Ability to work varied shifts including weekends and holidays
  • Be 18 years of age or above
  • Able to obtain and maintain all necessary licenses and cards such as TAM and Health card
  • Willingness to work in a loud and fast-paced environment
  • Possession or ability to possess a valid TAM card
  • Possession or ability to possess a Health card

Job Qualifications

  • Requires a minimum of 2 years previous work experience in a fine-dining restaurant
  • 2 years of sommelier experience is preferred
  • Court of Master Sommeliers Level 1 certification required
  • Must exhibit wine, beverage and advanced service knowledge including wine service, champagne, mixed cocktails, cordials, after dinner drinks, upselling, and tableside service
  • High school diploma or above
  • Fluent spoken and written English
  • Proficient in POS software

Job Duties

  • Greet guests in a positive, friendly manner with eye contact and intention
  • Communicate the needs of guests to co-workers, kitchen, and management
  • Actively participate and contribute to pre-shift meetings
  • Have complete knowledge of all food menu items, specifications, and allergies
  • Display a mastery in understanding and exceptional communication of the wine list, beer list, and cocktail offerings
  • Form, grow, and maintain relationships with guests for repeat business
  • Consistently follow sequence of service utilizing all proper procedures
  • Participate in a regular inventory for all beverages and supplies
  • Update inventory locations and bin labels whenever wines are moved
  • Eliminate waste by monitoring employees on pour levels and proper storage
  • Set-up and train employees on wine, beverage service, and knowledge
  • Periodically lead and host wine and beverage related classes
  • Enforce proper beverage service standards of all employees during service
  • Maintain clean, error-free wine lists by constantly updating and reprinting
  • Check in warehouse and direct beverage orders
  • Input all invoices from warehouse and direct beverage orders on the day the wine is received
  • Compare warehouse invoice against previous night's sales to ensure all proper beverage was ordered and correct any errors
  • Return or exchange any beverage where a warehouse or direct beverage order error has occurred
  • Stock wine prior to and after service
  • Set-up and break-down all by-the-glass and wine pairing areas
  • Organize all event wines expected to be served during the service period
  • Assist with placing beverage orders
  • Work closely with the Beverage Manager to maintain wine service spaces
  • Program and format bin numbers and wine information into POS systems
  • Attend regular group meetings
  • Assist with moving chairs and tables as needed
  • Perform table maintenance by checking on guests throughout service
  • Complete opening and closing side work
  • Maintain health code standards
  • Maintain table cleanliness utilizing a silent service approach
  • Bid farewell to guests using guest's name when known
  • Maintain professionalism
  • Anticipate guests' needs and respond appropriately
  • Work as a team assisting guests and employees’ needs
  • Perform all other job-related duties as requested
  • Be familiar with all Hotel services and local attractions to respond to guest inquiries
  • Maintain working knowledge of designated glassware and garnishes for each drink
  • Complete opening, closing, and ongoing side duties including folding napkins, polishing glassware, stocking glassware, restocking supply cabinets, cleaning and inspecting stations and service areas
