Job Requirements
- Minimum of 2 years previous work experience in fine-dining
- ability to communicate fluently in English
- must be at least 18 years old
- ability to work varied shifts including weekends and holidays
- possession or ability to obtain and maintain required licensing or active work cards
- ability to work efficiently in a team environment
- willingness to work in a fast-paced, loud environment
- possession or ability to obtain a valid TAM card
- possession or ability to obtain a health card
Job Qualifications
- Minimum of 2 years previous work experience in a fine-dining restaurant
- 2 years of sommelier experience preferred
- Court of Master Sommeliers Level 1 certification required
- advanced knowledge of wine, beverage, and service including wine service, champagne, cocktails, cordials, after dinner drinks, upselling, and tableside service
- high school diploma or above
- fluent spoken and written English
- proficient in POS software
Job Duties
- Greet guests in a positive, friendly manner
- communicate guest needs to co-workers, kitchen, and management
- participate in pre-shift meetings
- have complete knowledge of all food menu items, specifications, and allergies
- display mastery and exceptional communication of the wine list, beer list, and cocktail offerings
- form, grow, and maintain relationships with guests
- consistently follow sequence of service using all proper procedures
- participate in regular inventory for all beverages and supplies
- update inventory locations and bin labels when wines are moved
- monitor employees on pour levels and proper storage to eliminate waste
- set up and train employees on wine and beverage service and knowledge
- periodically lead and host wine and beverage classes
- enforce proper beverage service standards during service
- maintain clean, error-free wine lists by updating and reprinting
- check in warehouse and direct beverage orders
- input all invoices on day wine is received
- compare warehouse invoice against previous night’s sales and correct errors
- return or exchange beverage orders with errors
- stock wine prior to and after service
- set up and break down by-the-glass and wine pairing areas
- organize event wines prior to service
- assist with placing beverage orders
- work closely with Beverage Manager on wine service space organization
- assist with POS system programming of bin numbers and wine information
- attend regular group meetings
- assist with moving chairs and tables
- perform table maintenance during service
- complete opening and closing side work
- maintain health code standards
- maintain table cleanliness using silent service approach
- bid farewell to guests using guest names
- maintain professionalism
- anticipate guests’ needs and respond urgently
- work as a team supporting guests and employees
- perform all other job-related duties as requested
- be familiar with hotel services and local attractions
- maintain knowledge of designated glassware and garnishes
- complete side duties such as folding napkins, polishing glassware, stocking supplies, cleaning and inspecting service stations
- ensure guest experience consistency in lounge and dining room
- adapt service to different guest needs in lounge
- demonstrate a highly motivated and energetic personality
