Job Duties
- Promote, work, and act in a manner consistent with the mission of Goodfellas Pizzeria
- Maintain appropriate cleaning schedules for kitchen floors, mats, walls, hoods, equipment, and food storage areas
- Monitor sanitation practices to ensure employee compliance with standards and regulations
- Check quality of raw and cooked food products to meet standards
- Maintain proper food holding and refrigeration temperature control points
- Estimate amounts and costs of required supplies such as food and ingredients
- Control food cost and usage through product requisition, storage procedures, standard recipes, and waste control
- Instruct cooks or other workers in food preparation, cooking, garnishing, and presentation
- Work with restaurant managers to plan and price menu items, establish portion sizes, and prepare standard recipe cards
- Supervise or coordinate activities of cooks or workers engaged in food preparation
- Ensure all food is prepared and served according to recipes, portioning, cooking, and serving standards
- Schedule personnel according to anticipated business activity while meeting labor cost objectives
- Inspect supplies, equipment, and work areas to ensure conformance to standards
- Order or requisition food, equipment, and other supplies needed for efficient operation
- Ensure products are ordered according to specifications and received correctly
- Ensure deliveries comply with receiving policies and procedures
- Determine production schedules and staff requirements for timely service delivery
- Check quantity and quality of received products
- Determine food presentation and create decorative food displays
