Job Requirements
- High school diploma or equivalent
- Minimum 5 years of progressive experience in culinary or related hospitality field
- Culinary degree preferred but not required
- Knowledge of food and beverage preparation techniques
- Familiarity with health department and liquor laws
- Ability to work long hours and physically demanding tasks
- Strong communication skills
- Ability to multitask and manage priorities
- Capacity to maintain confidentiality
- Willingness to attend required meetings and trainings
- Capability to work cooperatively with team and management
- Commitment to maintain personal grooming standards

Job Qualifications
- At least 5 years of related progressive experience or culinary graduate with at least 3 years progressive experience in hotel or related field
- Knowledge of F&B preparation techniques, health department rules and regulations, liquor laws and regulations
- Ability to work long hours as needed
- Ability to exert moderate physical effort including lifting up to 50 pounds
- Maintain warm and friendly demeanor
- Effective verbal and written communication skills with employees and guests
- Effective listening, understanding, and clarifying of concerns
- Ability to multitask and prioritize to meet deadlines
- Service-oriented approach with guests and employees
- Attendance at required hotel meetings and training
- Participation in M.O.D. coverage as required
- Maintain regular attendance per Highgate scheduling standards

Job Duties
- Work with other F&B managers and keep them informed of F&B issues as they arise
- Keep immediate supervisor fully informed of all problems or matters requiring his/her attention
- Coordinate and monitor all phases of loss prevention in kitchen areas
- Prepare and submit required reports in a timely manner
- Monitor quality of all food product and presentation
- Ensure preparation of required reports including wage progress, payroll, revenue, employee schedules, quarterly action plans
- Oversee all aspects of daily operation of kitchen and food production areas including hot food from main kitchen and bakery, and cold food from pantry
- Make cooks aware of daily forecasts and customer counts for preparation
- Respond to guest complaints in a timely manner
- Ensure compliance with SOPs in all outlets
- Ensure compliance with requisition procedures
- Attend all meetings as required
- Conduct staff performance reviews per Highgate standards
- Implement and monitor corporate promotions including buffet and three-meal concepts
- Enforce all local health department sanitation laws
- Work with Executive Chef and Director of F&B to create and implement menus
- Design and oversee employee cafeteria rotating menu and operations
- Assess food portion size, visual appeal, taste and temperature
- Check stations at end of shifts for food storage and sanitation
- Review and approve weekly payroll
- Check food purchases for proper ordering, quality and pricing
- Oversee daily activities including preparation, sanitation, receiving inventories, logs, and food cost reports
- Prepare daily food production sheets
- Cut meat, poultry, and seafood according to daily business needs
