Job Requirements

  • Completion of a certificate program accredited by the American Culinary Federation Educational Institute of at least 48 semester units in Culinary Arts and two years’ experience in quantity food preparation
  • or two years’ journey level experience in quantity food preparation and cooking of complete meals in institutional, commercial, military, or similar establishment
  • valid California Class C Driver License or ability to utilize an alternative method of transportation
  • physical ability to stand or walk most of the time with bending, stooping, squatting, twisting, reaching, occasional lifting over 25 pounds and frequent lifting 10-25 pounds
  • submission of official transcripts and degree or certificate within seven calendar days of filing
  • no qualifying credit for fast food service experience
  • willingness to work any shift including evenings, nights, weekends, and holidays

Job Qualifications

  • associate's or bachelor's degree in Culinary Arts or related field
  • culinary certifications such as ServeSafe Food Manager Certification, Certified Fundamentals Cook, Certified Executive Pastry Chef, or Certified Fundamentals Pastry Cook completed within the last five years

  • instructs food services staff and/or inmate workers in health and safety regulations by observing and communicating
  • demonstrates sanitation methods
  • provides training videos on food handling
  • ensures quality assurance by inspecting food supplies
  • rejects poor quality supplies
  • oversees proper storage and rotation of food supplies
  • coordinates workstation cooking activities with other kitchen units
  • ensures utensils and work areas are clean and ready for the next shift

  • communicates with supervisor regarding menu changes and out-of-stock supplies
