Job Requirements

  • High school diploma or equivalent
  • Previous cooking experience in a commercial or institutional kitchen
  • Ability to comply with UC San Diego’s vaccination policy
  • Ability to pass a background check
  • Flexibility to work varied shifts including early mornings, evenings, weekends, and 10-hour workdays
  • Physical ability to lift 25 to 50 pounds
  • Must adhere to health codes including uniform, hair covering, and personal hygiene requirements
  • Strong attendance and punctuality
  • Mandated reporter training and compliance as required by California law

Job Qualifications

  • Experience working with standardized recipes and production sheets
  • Ability to safely operate and maintain food service equipment including mixers, food processors, slicers, blenders, grills, fryers, rotisseries, and steamers
  • Ability to measure dry and liquid ingredients per recipe specifications
  • Knowledge of food safety, sanitation, production methods and equipment maintenance
  • Ability to follow detailed instructions with minimal supervision
  • Strong time management and workload prioritization skills
  • Basic reading, writing, and arithmetic proficiency
  • Ability to lift 25 to 50 pounds
  • Effective communication skills with customers, students, staff, and faculty
  • Ability to accurately complete and maintain production records and temperature logs
  • Compliance with all federal and state food handler laws and department policies

Job Duties

  • Perform journeyman-level food preparation techniques under supervision
  • Train staff and student employees in entry-level cooking duties
  • Prepare food items including short grill, grab-and-go, made-to-order stations, salad dressings and sauces
  • Clean and prepare produce ensuring adherence to safety and sanitation standards
  • Serve meals maintaining high food quality and allergen control standards
  • Operate and maintain kitchen equipment such as mixers, slicers, grills, fryers and steamers
  • Coordinate production and food presentation, conduct quality control and assist in complex recipe preparation training
