Job Requirements
- High school diploma or equivalent
- Three years culinary experience or equivalent
- Current Food Protection Manager certification accredited by ANSI or current Utah Food Handler Permit
- Ability to perform essential functions of the job
- Effective human relations and communication skills
- Computer literacy
- Ability to organize and facilitate functions with minimal notice
- Knowledge of cost control, revenue generation, and prioritization for timely delivery and service
- Knowledge of operating a variety of kitchen equipment
- Ability to comply with departmental policies regarding attendance and evaluations
Job Qualifications
- Three years culinary experience or the equivalent
- Current Food Protection Manager certification accredited by ANSI or
- Current Utah Food Handler Permit
- Associate's degree in related fields such as culinary, hospitality, food management, nutrition, or business (preferred)
- Culinary Arts Certification (preferred)
- Certification as a Culinarian by the American Culinary Federation (preferred)
- Culinary experience in a healthcare environment (preferred)
Job Duties
- Bakes, roasts, stews, fries, steam-cooks, or otherwise prepares food products by following instructions and standardized hospital recipes
- Utilizes cooking knowledge to provide properly prepared foods in a timely fashion, adjusting recipes for special diets, food sensitivities, and allergies
- Assists culinary staff and chefs with menu development and creation of standardized recipes
- Conducts recipe audits to ensure accuracy and promotes food safety
- Adheres to manufacturer instructions and hospital kitchen procedures for operating cooking equipment such as combi-therm oven, pizza oven, turbo chef oven, proofer, slicer, chopper, steamer, broiler, griddle, brazier, blender, and microwave oven
- Weighs cooking products to ensure proper portion delivery
- Cleans work area including refrigerators, stoves, ovens, storerooms, and utensils to comply with sanitation requirements
- Performs quality checks for taste and appearance of finished food products
- Uses department-specific software and daily menus to complete purchase and issue requisitions and forecast cooking production
- Sets up and stocks area for food service delivery and assists in serving cooked items
- Orders, rotates, and maintains adequate stock levels required for cooking production
- Assists with catering functions including food preparation, set-up, presentation, and clean-up
- Develops, modifies, or experiments with hospital recipes and cooking procedures to improve quality, appearance, kitchen efficiency, or services
- Participates in the "Lean Path" waste management program
- Assists chefs with HACCP and department sanitation oversight meeting local, state, and federal regulations
- May serve as lead cook guiding and assisting in training less experienced culinary staff
