Job Requirements

  • Experience as a cook in large institutional kitchen preparing food for 400+ persons per meal
  • Skilled in food preparation and baking
  • Six months experience as lead worker of kitchen staff
  • Possession of valid Food Handler Training card at appointment
  • Ability to perform physical duties including lifting up to 70 pounds
  • Willingness to work irregular hours including evenings, weekends, and holidays
  • Ability to pass background investigation including psychological and polygraph testing
  • Commitment to serving in detention settings with persons in custody

Job Qualifications

  • Two years experience as a cook in County of San Diego or large institutional kitchen preparing food for 400+ persons per meal
  • Six months experience as a lead worker of kitchen staff
  • Completion of college-level course in Quantity Cookery or Therapeutic Diets (preferred)
  • Possession of valid Food Handler Training card
  • Food Safety Certification in accordance with FDA and California Retail Food Code (highly desirable)

Job Duties

  • Operate kitchen facility on assigned shift
  • Prepare meals for large institutional populations
  • Provide technical direction and training to food services personnel
  • Inspect and assign work to kitchen staff including persons in custody
  • Ensure compliance with food safety and handling protocols
  • Manage kitchen operations in varied settings including hospitals and detention facilities
  • Assist in inventory and supplies management as needed
