Job Requirements
- High school diploma or equivalent
- minimum six years experience in commercial food service or hospitality
- previous supervisory experience
- experience with large volume cook-chill process
- experience in high-end off-site catering
- proficient in English
- ability to write recipes
- strong knife skills
- knowledge of kitchen equipment
- able to use kitchen tools without restrictions
- basic math skills
- able to follow directions
- neat appearance
- able to work independently and in a team

Job Qualifications

- proficiency with English language speaking, reading and writing

- previous related supervisory experience
- experience with large volume cook-chill process and commissary production
- experience in high-end off-site catering
- ability to write recipes with method of preparation
- relevant knife skills
- knowledgeable in standard kitchen equipment
- proficiency with kitchen tools and equipment
- basic math skills
- ability to analyze thermometers and measuring devices
- ability to follow directions
- neat appearance and compliance with dress code
- ability to work independently and with teams

Job Duties
- Leads execution of off-site catered events
- leads production of large volume cook-chill process
- prepares, cooks, coordinates and oversees production of menu items according to proper preparation methods
- communicates changes to Culinary Team and Front of House Staff
- executes scheduled menu in absence of Chef/Production Manager or Person-in-Charge
- reads and properly executes standardized recipes
- leads Culinary Team in preparation and presentation of catered functions
- tastes and evaluates food before service
- participates in daily production meetings
- manages team in absence of Chef/Production Manager
- fries, grills, sautés, roasts, bakes, braises and steams food products
- heats soups, sauces and prepared products to appropriate temperatures
- carves or slices meat for service
- ensures kitchen is stocked and provides requisitions
- maintains food quality, presentation and sanitation standards
- cleans and restocks workstation
- cools, refrigerates, labels and stores food per HACCP
- records food portion amounts
- instructs kitchen personnel in equipment use
- assists with on-the-job training
- recycles products
- fills sanitation and temperature logs
- follows sanitation standards
- complies with food employee illness policy
- communicates effectively
- represents HUDS positively
- supports mission and values
- attends trainings
- maintains certifications
- performs other duties as required
