Job Requirements
- High school diploma or equivalent
- culinary experience
- ability to work flexible hours including long shifts
- medium physical strength - ability to exert up to 50 pounds occasionally
- ability to stand during entire shift
- ability to tolerate temperature changes
- knowledge of food safety and sanitation
- ability to follow standardized recipes and instructions
Job Qualifications
- High school diploma or equivalent preferred
- experience in hotel or related field preferred
- culinary experience required
- thorough knowledge of menus and preparation standards
- proficiency in cooking techniques including charbroiling, poaching, deep-frying, sautéing, braising, roasting, and par-cooking
- ability to work flexible and long hours
- ability to lift up to 50 pounds occasionally
- ability to stand entire shift
- able to withstand temperature variations in kitchen environment
Job Duties
- Maintain cleanliness and organization of all storage areas
- complete necessary food and station preparation prior to restaurant opening to ensure prompt guest service
- prepare and display buffet food items per hotel standards
- recognize quality standards in fresh vegetables, fish, dairy and meat products
- maintain clean and sanitary environment with proper handling, storage, and sanitation
- prepare food for banquets per Banquet Event Orders
- prepare and service food for employee cafeteria as directed
- prepare all foods following standard recipes and special directions
- breakdown buffets and kitchen lines properly after meals
- work banquet food stations as scheduled
- know location and operation of fire extinguishing equipment
- practice safe work habits
- use production charts
- support any kitchen position in need
- follow health department and company food safety regulations
- operate and maintain cleanliness of kitchen equipment
- maintain a 'Clean As You Go' policy
- assist in food storage and rotation
- sign keys out and in under supervision as needed
