Job Description
The position being offered is for a School Baker classified at the BC-06 level. The School Baker plays a crucial role in the daily food service operations, primarily focusing on the preparation, baking, and portioning of a variety of baked goods, including breads, rolls, buns, biscuits, muffins, pizza crusts, and other related items. Job Requirements
- Graduation from high school or equivalent
- Six months of work experience as an apprentice or helper in a kitchen acquiring basic baking skills including weighing, measuring and combining ingredients, mixing dough for simple baked products, scaling and shaping dough for rolls and buns
- One year of experience as a baker in a restaurant, hotel, hospital, school, or institution with hands-on experience in producing a variety of baked goods from scratch in large quantities
- Ability to perform mathematical calculations to adjust recipe yield
- Knowledge of quantity baking including ingredient functions, substitutions, and food safety practices
- Experience with use and maintenance of baking utensils and equipment
- Ability to clean and maintain food service areas in a sanitary manner
- Capability to direct helpers and assist in training new employees
- Willingness to attend staff meetings, workshops, and training sessions
- Meet annual USDA minimum required training hours
- Possess good communication and organizational skills
- Applicants must have actual baking experience involving the complete baking process in large quantities
- No experience limited only to serving, cleaning, or partial baking tasks will be accepted

Job Qualifications
- Graduation from high school or equivalent

- One year of experience as a baker in a restaurant, hotel, hospital, school, or institution with hands-on experience in producing a variety of baked goods from scratch in large quantities
- Proficiency in quantity baking including knowledge of ingredient types, properties, functions, substitutions, recipe adjustments, calculating bread equivalents, and determining baking times
- Experience with the use, care, and safe handling of utensils, tools, and equipment used in baking
- Knowledge of methods of handling and storing foods and food and kitchen safety and sanitation practices
- Ability to perform duties required for school food services programs
- Capable of directing and instructing helpers as well as assisting in training new food service employees

Job Duties
- Coordinate and work closely with food service employees to ensure timely preparation of baked goods to meet meal service times and satellite delivery schedule
- Review daily production records, determine appropriate standardized recipes, secure necessary ingredients and equipment for preparation and baking
- Accurately weigh, measure, and mix ingredients according to approved standardized recipes for daily and weekly production needs, perform mathematical calculations to adjust recipe yield
- Prepare mixes for and bake a variety of baked goods including bread, rolls, buns, biscuits, muffins, pizza crusts, and wiener in a blanket
- Set up serving counters for meal service, serve students and staff, and replenish food and other supplementary items as needed
- Portion and direct the portioning/packing of menu items for satellite meals
- Clean and maintain work areas, serving counters, and dining areas in a clean, sanitary, and orderly manner, and thoroughly clean and sanitize utensils and equipment after use
- Properly label, store, and dispose of leftover foods, document on production records, inform the School Food Services Manager of leftovers and recommend their utilization
- Receive ordered provisions, document product temperatures if applicable, report discrepancies to the School Food Services Manager, date and store goods properly, record supplies and ingredients used, and assist in completing monthly inventory and maintaining routine records
- Direct and instruct cafeteria helpers and other adult/student helpers assigned to assist with baking, serving, and clean-up
