Job Requirements

  • Graduation from high school or equivalent
  • Six months of work experience as a kitchen apprentice or helper acquiring basic baking skills
  • One year of specialized hands-on baking experience producing large quantities of baked goods
  • Knowledge of ingredient properties and safe handling of baking utensils and equipment
  • Ability to adjust standardized recipes and calculate bread equivalents
  • Capability to clean and maintain sanitary work and dining areas
  • Compliance with USDA training requirements and department policies

Job Qualifications

  • Graduation from high school or equivalent
  • One year of specialized baking experience in institutions such as restaurants, hotels, schools, or hospitals
  • Experience producing a variety of baked goods from scratch and in large quantities
  • Knowledge of baking ingredients, their properties, functions, and substitutions
  • Understanding of standardized recipes and ability to adjust production to meet demand
  • Familiarity with baking equipment and safe food handling practices
  • Ability to supervise and train food service helpers
  • Compliance with food safety and sanitation standards
  • Ability to perform mathematical calculations for recipe adjustments
  • Good communication and teamwork skills

Job Duties

  • Coordinates and works closely with other food service employees to ensure timely preparation of baked goods to meet meal service and delivery schedules
  • Reviews daily production records, determines standardized recipes, and secures ingredients and equipment for baking
  • Accurately weighs, measures, and mixes ingredients according to standardized recipes and adjusts quantities as needed
  • Prepares and bakes bread, rolls, buns, biscuits, muffins, pizza crusts, and other baked goods
  • Sets up serving counters, serves students and staff, and replenishes food and supplementary items
  • Portions or directs portioning and packing of menu items for satellite meals
  • Cleans and maintains work areas, serving counters, and dining areas in a sanitary and orderly manner
  • Properly labels, stores, or disposes of leftover foods and documents production records
  • Receives ordered provisions, documents temperatures, reports discrepancies, dates and stores goods, and assists with inventory and record keeping
  • Directs or instructs cafeteria helpers and may supervise serving operations at satellite schools
  • Attends staff meetings, workshops, and training sessions and achieves USDA-required training hours
