Job Requirements
- Ability to walk and stand to a significant degree
- Ability to move fingers and hands quickly
- Effective oral communication with kitchen and hotel staff
- Ability to taste and smell for food quality testing
- Ability to perform physical activities such as reaching, bending, stopping, shaking, stirring and wiping
- Ability to lift between 20 to 50 pounds frequently and up to 100 pounds infrequently
- Ability to work indoors with exposure to varying kitchen temperatures
- Ability to learn and improve culinary skills
- Must display proficiency in culinary techniques
- Ability to work in a fast-paced, high-pressure environment

- High school diploma or equivalent
- Four plus years of relevant kitchen experience
- Previous supervisory experience preferred
- Line cook and banquet cook experience required
- Culinary degree or formal training preferred
- Knowledge of OSHA and health safety standards
- Ability to work flexible hours including weekends and holidays
Job Qualifications
- High school graduate
- Four or more years experience in an upscale restaurant kitchen
- Previous supervisory experience a plus
- Experience as line cook and banquet cook required
- Culinary degree or formal training preferred
- Familiarity with weights and measurements for recipe adherence
- Solid understanding of OSHA and health department standards
- Ability to work flexible shifts including holidays and weekends
- Strong organizational skills and attention to detail
- Professional communication skills both verbal and written
- Ability to work collaboratively in a team environment
- Ability to follow instructions and accept constructive criticism professionally
Job Duties
- Oversee the running of the kitchen in the absence of Sous Chefs and Chefs
- Make informed decisions to resolve food issues during absence of Sous Chefs and Chefs
- Mentor and coach Cook 2’s and Cook 3’s to help them complete their job functions
- Utilize advanced knowledge of cooking methods, ingredients, equipment and procedures
- Prepare food correctly using all products and ingredients in the kitchen with limited supervision
- Perform opening and closing duties of the kitchen
- Inspect all food products for quality
- Move between and cover all stations in both kitchens, following hotel standards and SOPs
- Execute soups and sauces with little to no supervision
- Work well under pressure to meet production schedules and guest order timelines
- Apply traditional knife skills consistently in the kitchen
- Set up work stations with required mise en place, tools, equipment and supplies
- Follow all storage procedures for food items
- Use culinary equipment safely and properly
- Follow recipe cards and prep lists accurately
- Create and execute daily specials with final approval by Chefs
- Maintain safety, hygiene and cleanliness meeting health department and OSHA standards
- Attend all department meetings and company trainings
