Job Qualifications

  • High school graduate
  • 4+ years experience in an upscale restaurant kitchen
  • Previous supervisory experience preferred
  • Experience as a line cook and banquet cook
  • Culinary degree or formal training preferred
  • Familiarity with weights and measurements for recipes
  • Understanding of OSHA and health department standards
  • Strong organizational skills

Job Duties

  • Oversee the running of the kitchen in the absence of the Sous Chefs/Chefs
  • Make informed decisions in absence of Sous Chefs/Chefs to ensure best guest experience
  • Mentor and coach Cook 2's and Cook 3's
  • Utilize advanced knowledge of cooking methods, ingredients, equipment, and procedures
  • Perform opening and closing duties of the kitchen
  • Identify and inspect all food products for quality
  • Move between and cover all stations in both kitchens following hotel standards and SOPs
  • Execute soups and sauces with minimal supervision
  • Work well under pressure to meet production schedules and guest order timelines
  • Maintain traditional knife skills and apply them consistently
  • Set up workstations with required mise en place, tools, equipment, and supplies
  • Follow all storage procedures for food handling
  • Safely use all culinary equipment
  • Accurately follow recipe cards and prep lists
  • Create and execute daily specials with final Chef approval
  • Maintain safety, hygiene, and cleanliness meeting health department and OSHA standards
  • Attend all department meetings and company trainings
