Job Requirements

  • Must be at least 21 years old
  • certified in Serve Safe Food Sanitation
  • able to work flexible schedules including weekends and holidays
  • ability to lift up to 50 lbs
  • able to stand and walk for extended periods
  • able to work in hot, cold, noisy environments
  • comply with health and safety regulations
  • skilled in kitchen equipment operation
  • strong communication skills
  • knowledge of Profit & Loss statements
  • ability to multitask effectively

Job Qualifications

  • High school diploma or GED
  • college degree or culinary arts degree preferred
  • minimum three years experience as Room Chef or similar role
  • experience in multiunit operations
  • advanced food knowledge and cooking styles
  • understanding of menu engineering and food pairing
  • banquet production experience
  • proficiency in English
  • skilled in MS Office and basic math
  • knowledge of HACCP guidelines
  • Serve Safe Food Sanitation certification
  • ability to obtain Indiana Horse Racing Commission License

Job Duties

  • Support Executive Chef in food production
  • prepare and cook raw and cooked food products
  • coach kitchen staff on menu items and company standards
  • ensure efficient and economical operations
  • develop menus and SOPs
  • perform various cooking techniques including sauteing, frying, grilling, broiling, boiling, and steaming
  • handle inventory, reporting, and record keeping
  • assist with setup and operation of multiple outlets
  • coach culinary employees for labor cross-utilization
  • manage financial aspects including labor control and waste reduction
  • develop and train on SOPs
  • maintain sanitation and food safety standards
  • communicate department activities to supervising Chef
  • ensure proper kitchen maintenance
  • mentor team members for high-quality service
