Job Requirements

  • Bachelor's degree in related field or 5 years of experience in a similar position
  • 2-year minimum in leadership role overseeing minimum of 5 people
  • Ability to obtain any government required license or certificates
  • CPR certification or First Aid training preferred
  • Must obtain TABC and Food Handlers Certification prior to beginning work
  • Must be reliable and responsible
  • Ability to speak Spanish preferred
  • Ability to read, listen, and communicate in English both verbally and in writing
  • Basic math skills to understand measurements, requisition amounts, and portion sizes
  • Ability to operate kitchen appliances such as stoves, ovens, mixers, etc.
  • Ability to grasp, lift, carry, or otherwise move or push goods on a hand cart weighing up to 50 pounds regularly
  • Ability to perform duties in confined spaces
  • Ability to remain on feet for long periods of time
  • Ability to perform duties within extreme temperature ranges
  • Able to work mornings, swing, nights, holidays, and weekends

Job Duties

  • Coordinate all food production needs and food presentation operations for the Banquets
  • Ensure the production of high quality food for the Banquets as well as all other food outlets of Moody Gardens
  • Maintain a high quality image through effective housekeeping, maintenance, and sanitation in areas of responsibility
  • Maintain and evaluate existing food concepts and the development of creative new food concepts which ensure the highest quality food and profitability
  • Operate within the budgeted guidelines, and maintain food cost percentages
  • Orienting new employees for which you are in charge and coordinate internal training and developmental programs when appropriate
  • Implement and support control procedures within the department
  • Staff kitchen to meet kitchen responsibilities
  • Ensure good safety practices of kitchen employees and assist in the maintenance of proper emergency and security procedures
  • Operate in compliance with all Local, State, and Federal laws and government regulations
  • Assist Executive Chef with kitchen operations and Banquets
  • Estimate daily production needs on a weekly basis and communicates production needs to kitchen personnel daily
  • Supervise and coordinate activities of cooks and workers engaged in food preparation
  • Any and all other duties as assigned
