Job Requirements

  • Bachelor's degree or equivalent experience in hospitality management or related field preferred
  • Minimum of 2 years management experience in fine-dining or high-volume restaurant settings
  • Strong leadership and team management skills
  • Excellent communication and interpersonal abilities
  • Knowledge of health, safety, and sanitation regulations
  • Ability to work flexible hours including evenings, weekends, and holidays
  • Proficiency in budget management and cost control
  • ServSafe Certification preferred

Job Qualifications

  • 2-4 years of fine-dining restaurant management experience in a high-volume environment
  • Deep knowledge of food, wine, and French dining traditions, with the ability to communicate them with elegance and authority
  • Proven expertise in operations management, purchasing, scheduling, and cost control
  • Exceptional communication skills, polished professional demeanor, and strong leadership presence
  • ServSafe Certification preferred
  • A passion for hospitality, design, and the blending of service, craft, and culture that defines Roman and Williams Guild and La Mercerie

Job Duties

  • Oversee all aspects of restaurant service, aligning day-to-day operations with budgetary goals while maintaining uncompromising quality and guest satisfaction
  • Lead and inspire the front-of-house team to deliver refined, thoughtful service that feels personal, warm, and precise
  • Collaborate with the management team, and Roman and Williams Guild retail and merchandising teams to ensure the guest experience flows seamlessly across the restaurant and shop
  • Anticipate guest needs and preferences, maintaining detailed awareness of regular clientele and special occasions
  • Conduct pre-shift meetings, maintain floor presence during service, and ensure every plate, pour, and interaction reflects the La Mercerie standard
  • Safeguard the visual and sensory integrity of the space, ensuring that music, lighting, table settings, and pacing reflect the environment's curated aesthetic
  • Oversee purchasing, inventory, and cost controls to sustain operational efficiency without sacrificing craftsmanship or quality
  • Recruit, train, and mentor service staff in both classic and contemporary hospitality traditions
  • Foster a culture of respect, creativity, and professionalism, encouraging collaboration between culinary, service, and retail teams
  • Uphold health, safety, and sanitation standards in compliance with all regulatory requirements
