Job Requirements

  • High school diploma or G.E.D
  • Culinary degree or formal apprenticeship or equivalent on-the-job experience
  • Three to four years of à la carte management experience
  • ServSafe certification or willingness to obtain
  • Knowledge of HACCP standards
  • Level 2 Gaming License
  • Strong organizational skills
  • Strong interpersonal skills

  • Level 2 Gaming License required

Job Duties

  • Supervise and coordinate activities of cooks and workers engaged in food preparation in all Timbers 24 hour venue locations, Room Service and Satellite Employee Dining Rooms
  • Prepare and cook foods on the hot or cold line for special guests, functions, and during high business volumes
  • Collaborate with personnel to plan and develop recipes and special menus considering seasonal availability and customer numbers
  • Check the quality of raw and cooked food products to meet company standards
  • Check the quantity and quality of received products at all locations
  • Demonstrate new cooking techniques and equipment to staff
  • Determine food presentation and create creative food displays
  • Determine production schedules and staff requirements to ensure timely delivery
  • Estimate amounts and costs of required supplies
  • Inspect supplies, equipment, and work areas for conformance to standards
  • Instruct cooks and workers in preparation, cooking, garnishing, and presentation of food
  • Monitor sanitation practices ensuring employees follow standards and regulations
  • Order or requisition food and other supplies to maintain efficient operations
  • Recruit and hire staff including cooks and kitchen workers
  • Maintain knowledge of fine dining trends
  • Follow all recipes, specifications, and control procedures
  • Maintain professional grooming and appearance acting as a role model
  • Promote a fun atmosphere for guests
  • Encourage mutual respect and integrity among employees
  • Instill an environment of open communication and conflict resolution
  • Retain employees through training and development involvement
  • Explain procedures and operations in advance
  • Supervise Restaurant Sous Chefs and Cook III’s directly and Cook I’s and II’s indirectly
