Job Requirements
- High school diploma or equivalent
- minimum 3 years experience in kitchen leadership role
- strong leadership and communication skills
- knowledge of health, safety, and sanitation standards
- ability to manage kitchen operations and food production efficiently
- proficiency in budgeting and cost control
- capability to develop menus and implement culinary concepts
- ability to work collaboratively with multiple departments
- experience in managing and training culinary staff
- flexibility to work varied hours including weekends and holidays

Job Qualifications
- At least 3 years' experience in a kitchen leadership capacity
- excellent knowledge of current culinary trends
- experience in a large convention hotel or high volume business strongly preferred
- bachelor's degree or equivalent
- union environment experience preferred
Job Duties
- Consistent maintenance and refinement of service standards
- ensures compliance with applicable laws and regulations
- understands associates positions well enough to perform duties in associate's absence
- responsible for the day to day operation for assigned culinary area, including running all kitchen and food production outlets efficiently and effectively while minimizing operating costs
- ensure compliance with health, safety and sanitation standards and prepare for health inspections
- enforce proper trash procedures
- supervise upkeep, safety and cleanliness in food preparation, refrigeration, and storage areas
- work with Executive Chef on menu development and produce creative dishes
- maintain knowledge of local and international market trends to maximize sales opportunities
- monitor competitor's food production and offerings
- assist Sales team with promotion of events and tastings
- collaborate with Director of Procurement on purchasing standards and product quality evaluation
- control requisitioning and forecast food volumes to achieve profitability
- assist in budgeting and control overheads
- inspect food services to maintain quality and presentation
- ensure positive guest service and handle complaints effectively
- communicate daily with Executive Chef and Executive Steward regarding forecasts and staffing
- supervise kitchen sanitation and timing of food service to outlets
- complete all financial and administrative duties accurately and timely
- create recipe decks, costing sheets and allergy guides
- conduct daily/weekly walkthroughs and maintain equipment standards
- schedule and conduct monthly food and beverage inventories
- review staffing levels to meet service and financial goals
- execute setup instructions for events and handle special requests
- recruit, interview and develop team members with training and supervision
- conduct daily standup meetings
- assist in developing goals and prioritizing tasks
- use interpersonal and communication skills to lead and influence team
- foster mutual trust, respect and cooperation among associates
- solicit and address associate feedback
- maintain a professional appearance
- respond effectively to emergencies
- attend required trainings and meetings
- perform additional duties as assigned by senior management
