Job Requirements
- Bachelor’s degree or equivalent
- minimum 3 years kitchen leadership experience
- knowledge of culinary trends
- experience in large convention or high volume hotel
- preferred union environment experience
- ability to comply with health and safety regulations
- strong leadership and team management skills
- excellent communication and problem-solving skills
- proficiency in budgeting and financial management
- ability to manage multiple priorities and work under pressure
Job Qualifications
- At least 3 years experience in a kitchen leadership capacity
- excellent knowledge of current culinary trends
- experience in large convention hotels or high volume business strongly preferred
- bachelor’s degree or equivalent
- experience working in a union environment preferred
Job Duties
- Consistent maintenance and refinement of service standards
- ensure compliance with applicable laws and regulations
- perform duties in associates absence as needed
- manage day to day operations for culinary area including all kitchen and food production outlets
- ensure compliance with health, safety and sanitation standards
- supervise kitchen sanitation and timing of service
- work with Executive Chef to plan and implement menu development
- maintain knowledge of local and international food trends
- coordinate with Sales for event promotion and tasting
- collaborate with Director of Procurement on purchasing and quality control
- control food requisitioning by forecasting volume
- assist in budgeting process and control overheads
- inspect food services to ensure quality and presentation
- respond to guest complaints and ensure positive service
- communicate daily with Executive Chef and Executive Steward
- supervise kitchen sanitation and delivery quality
- complete all financial and personnel administrative duties timely
- create recipe decks, costing sheets and allergy guides
- schedule and conduct walk-throughs and maintenance of equipment
- conduct monthly inventories
- review staffing levels and maintain productivity
- execute setup instructions for events and handle special requests
- recruit, train and develop team members
- conduct daily meetings with associates
- develop goals and plans
- lead and encourage team with communication skills
- build mutual trust and respect among associates
- solicit associate feedback and ensure recognition
- maintain professional appearance and uphold standards
- respond effectively to emergency and safety situations
- attend required trainings and meetings
- perform other duties as assigned by senior management
