Job Requirements

  • High school diploma or G.E.D.
  • culinary degree or formal apprenticeship
  • three to four years fine dining or a la carte experience
  • strong organizational and interpersonal skills
  • appropriate licenses as required
  • ServSafe certification or ability to become certified
  • knowledge of HACCP standards
  • ability to read and interpret documents
  • ability to write reports and memos
  • ability to communicate effectively
  • ability to perform arithmetic calculations
  • ability to apply common sense reasoning
  • physical ability to lift up to 50 lb.
  • physical ability to stand and walk frequently
  • visual acuity including close, distance, peripheral vision, depth perception, and focus adjustment

Job Duties

  • Prepares and cooks foods of all types
  • supervises and coordinates activities of cooks and workers engaged in food preparation
  • collaborates with other personnel to plan and develop recipes and special menus
  • checks the quality of raw and cooked food products
  • verifies quantity and quality of received products
  • demonstrates new cooking techniques and equipment to staff
  • determines presentation and creates decorative food displays
  • schedules production and staff to ensure timely delivery
  • estimates amounts and costs of supplies
  • inspects supplies, equipment, and work areas
  • instructs cooks and other workers in food preparation and presentation
  • monitors sanitation practices
  • orders food and supplies
  • recruits and hires staff
  • maintains knowledge of fine dining trends
  • follows recipes, specs, and procedures
  • maintains professional grooming and appearance
