Job Requirements

  • Minimum of five years culinary experience in related fields
  • Two years experience in high-volume or fine dining environment
  • Strong understanding of profit and loss, cost control, menu planning, budgeting
  • Ability to work all kitchen operations including high-volume production
  • Ability to communicate clearly with guests, team members, and management
  • Strong time management and ability to work independently
  • Flexible schedule including nights, weekends, and holidays
  • Ability to make effective decisions under pressure
  • Must obtain gaming license and California Food Handler Certification
  • Physical ability to stand long periods and perform manual tasks
  • Ability to lift 50 pounds and push 150-250 pounds
  • Manual dexterity to operate kitchen equipment

Job Qualifications

  • Minimum of five years of culinary experience in related fields
  • At least two years of experience in high-volume and/or fine dining environments
  • Strong knowledge of profit and loss statements, cost control, menu planning, budgeting, training, inventory control, and sanitation
  • Proficient in all kitchen operations including high-volume production across multiple meal services
  • Skilled in fine dining techniques such as butchering, baking, soup and stock preparation, sauces, roasting, sautéing, broiling, grilling, and cold food production
  • Excellent communication skills both written and verbal
  • Ability to work independently and manage time effectively
  • Demonstrated maturity, sound judgment, and effective decision-making under pressure
  • Must be able to obtain a gaming license and California Food Handler Certification

Job Duties

  • Redefine hospitality by supporting and promoting Graton Resort & Casino values
  • Oversee daily kitchen operations to ensure smooth food production and service efficiency
  • Supervise, train, and mentor kitchen team members while maintaining food preparation standards
  • Develop, test, and execute recipes aligned with the resort’s brand and guest expectations
  • Maintain inventory control and manage food costs to ensure operational efficiency
  • Enforce safety, sanitation, and regulatory compliance including Department of Health and OSHA standards
  • Schedule team members effectively, monitor attendance, payroll accuracy, and maintain performance documentation
  • Facilitate team communication through daily huddles and operational updates
  • Uphold department policies and foster a positive work environment with fair performance management
