Job Requirements

  • Must be able to stand and walk for up to 8 hours
  • must have ability to see distances and distinguish shapes
  • must communicate clearly
  • able to tolerate exposure to heat, steam, smoke and cold
  • able to reach heights of approximately 6 feet and depths of 2.5 to 3 feet
  • must have good mobility and flexibility

  • able to read, write and perform basic math calculations
  • able to control fingers for writing, slicing, chopping and equipment operation
  • fit through openings 30 inches wide
  • able to work irregular hours under pressure
  • capable of lifting up to 50 pounds
  • able to carry trays weighing about 50 pounds
  • exposure to dish and cleaning chemicals acceptable

Job Duties

  • Prepares cooking items
  • reports to work well-groomed, in clean and proper uniform and practices good personal hygiene
  • uses, maintains and cleans all kitchen equipment and prep/storage areas
  • stocks and rotates products to ensure they meet shelf life standards
  • has sufficient knowledge of recipes, menu items and prep procedures to ensure correct portioning, quality and cooking standards
  • prepares prep items according to guest requests following food safety procedures
  • controls food cost
  • ensures products are accurately portioned and prepared as specified
  • utilizes first in first out standards
  • maintains cleanliness of kitchen, prep areas, coolers and storage
  • follows safety procedures for food handling, rotation and storage
  • conducts line sweeps and practices “clean as you go” throughout the shift
  • understands OSHA and health department standards
  • cleans all equipment as directed
  • anticipates and corrects system breakdowns
  • communicates product, service, equipment and safety issues with management
  • keeps management informed and proposes solutions
  • assists team members with prep and dishwashing
  • assists front of house staff with dining room cleanliness
  • provides guest service through communication and cooperation with front of house staff
