Job Requirements

  • Minimum 5 years executive chef or executive sous chef experience
  • Experience in luxury 4 Diamond convention resort preferred
  • Serve Safe Certified Food Manager
  • Prior customer service and administrative experience preferred
  • Knowledge of Microsoft Word, Excel, Delphi or similar programs
  • Excellent organizational skills
  • Clear, positive, energetic communication skills
  • Able to deliver and communicate to a diverse crowd of associates
  • Secondary culinary education preferred but not mandatory
  • Excellent communication and literature skills
  • Bilingual preferred
  • Ability to sit and type or write for extended periods
  • Able to work in environments with exposure to humidity, steam, extreme temperatures, and hazardous cleaning chemicals
  • Familiarity with computer, telephone with multi-lines, photocopier, and fax machine

Job Duties

  • Manage the efficient operation of kitchen and food production outlets
  • Collaborate with Food and Beverage Director on budgeting and cost control
  • Supervise menu design and recipe standardization
  • Ensure high standards of cleanliness and hygiene in kitchen
  • Oversee purchasing, receiving, and quality control of food products
  • Recruit, train, and schedule kitchen staff
  • Conduct regular inspections of food service outlets
  • Maintain and schedule equipment maintenance
  • Stay updated on food trends and competitor offerings
  • Promote culinary events and specialties
  • Establish effective administrative procedures
  • Participate in food and beverage department meetings
  • Engage with meeting planners for menu planning
  • Monitor food cost, payroll, and overheads to achieve budget
  • Work with banquet chef on menu development
