Job Requirements
- Minimum 10 years experience as an executive chef
- experience leading multiple outlets
- culinary arts certification or degree preferred
- ServSafe and Food Safety Handler certification required
- strong financial and computer skills
- proficiency with Microsoft Office and POS systems
- ability to travel 10 to 25 percent
- ability to work flexible schedules
- strong leadership and communication skills
Job Qualifications
- Minimum 10 years experience as an executive chef in high-volume industry-leading concepts, established restaurants, or catering companies
- previous experience as a leader over multiple outlets with emphasis on menu development and cost controls
- certificate or degree in culinary arts preferred
- ServSafe and Food Safety Handler certifications required
- strong financial and computer skills including understanding of P&Ls and budgeting
- proficiency with Microsoft Office Suite programs and point-of-sale systems
- proven ability to lead teams clearly and positively
- ability to travel 10 to 25 percent within region
- ability to work flexible schedules
- excellent communication and leadership skills
Job Duties
- Implement company food and beverage standards and consistently strive to improve culinary offerings within the assigned region
- regional oversight and manage food cost, kitchen labor costs, and unit profitability
- support region's chef development by participating or facilitating the onboarding of new chefs, coaching, training, and identifying written development plans for less experienced chefs
- participate or facilitate new hire practicals and ensure national standards are followed in that region
- review, analyze, and support the development of action plans for unit and regional financial performance related to food and labor costs
- support troubleshooting and problem solving in local culinary issues, consult HR on employee related issues, ensure menu and product standards at properties
- plan and execute VIP or other large, special events, coordinate resources
- oversee culinary business plans for new unit openings and ensure proper integration with culinary and food and beverage teams
- hire, train, and mobilize kitchen and service teams
- develop and maintain recipes, portion specifications, standard preparation procedures
- determine purchasing specifications and budget allotments for all menu items
- prepare operational reports highlighting progress, adverse trends, and make recommendations
- maintain knowledge of and compliance with company and health department policies, regulations, and standards
- possess working knowledge of invoice tracking, labor tracking, schedule preparation, food and labor cost management, inventory control, and hiring, counseling, termination policies
