Job Requirements

  • High school diploma or equivalent
  • Minimum of one year culinary management experience
  • Minimum of two years fine-dining culinary experience
  • Knowledge of Chinese cooking techniques
  • Ability to work all stations in a Chinese kitchen
  • Active ServSafe Food Manager Certification
  • Effective communication skills
  • Ability to read all tickets and organize staff
  • Ability to multitask
  • Ability to work hands-on in a high volume kitchen including three meal periods
  • Must be at least 21 years old
  • Must be able to obtain UAIC Tribal Gaming License
  • Must have normal vision including color distinction
  • Must be able to lift up to 50 lbs with or without assistance
  • Must be able to push up to 250 lbs on a pushcart
  • Must be able to enter walk-in units with temperatures to -10 degrees
  • Ability to handle heat from cooking appliances and materials
  • Ability to stand for the duration of shift and perform physical movements
  • Normal sense of smell, taste, touch, and sound

Job Duties

  • Practice, support, and promote company-wide service mission and AAA Four Diamond service standards
  • Supervise, coordinate, train, and oversee staff in food preparation and presentation
  • Maintain quality and quantity control, par levels, and product inventory sheets
  • Provide input and suggestions for menu revisions and daily operations
  • Assist in the creation of weekly schedules for kitchen staff and special events
  • Operate and oversee use of kitchen equipment and appliances
  • Maintain standards of sanitation, kitchen hygiene, and food safety
  • Monitor sanitation practices for compliance
  • Check quality of raw and cooked food products to ensure standards
  • Record production, office, and operational data on specified forms
  • Manage financial reporting related to kitchen including profit and loss
  • Display knowledge of emergency procedures
  • Follow schedules and specific job duties
  • Maintain personal grooming and uniform standards
  • Promote teamwork and communicate consistently with management
  • Follow SOPs, recipe books, and guidelines
  • Ensure supplies are available for consistent quality
  • Follow health department rules, HACCP, sanitation, and safety procedures
  • Ensure kitchen and equipment are clean and hazard-free
