Job Duties
- establish and oversee kitchen systems and processes including opening and closing checklists, quality control checklists, ordering and inventory procedures, daily and weekly cleaning lists, and menu planning, presentation, and execution
- create daily and weekly specials and ensure cost of each item aligns with expectations and target market
- conduct daily pre-shift meetings with kitchen team to discuss systems, notes, goals, changes, and ideas
- uphold all kitchen systems and processes when Executive Chef is not present
- communicate with General Manager to determine labor and sales forecast
- fully manage kitchen labor including hiring and scheduling staff
- order all food and related products keeping COGS in line with expectations
- communicate Commissary issues or suggestions to Commissary Manager
- maintain cleanliness and organization in cooking and storage areas
- oversee prep ensuring recipes and procedures are followed, altering recipes as needed
- oversee execution of orders and food presentation maintaining prompt ticket times
- coach team members to encourage growth and cross-train in kitchen areas
- practice preventative maintenance and ensure necessary repairs on kitchen equipment
