Job Qualifications
- 2+ years of experience in baking or equivalent combination of culinary education and experience
- well organized with strong attention to detail
- demonstrated knowledge of basic baking techniques, safe use of knives, proper workstation sanitation techniques, and food temperature danger zone
- familiarity with professional stoves, ovens and kitchen appliances
- demonstrated passion for baking a variety of bakery items and providing excellent service
- ability to work safely and remain calm and organized in a crowded, deadline-driven environment
- demonstrated organizational and verbal/written communication skills
- self-motivated
- ability to spend 100% of work time standing with regular exposure to cold, heat, and water
- ability to lift and transport 50 lbs regularly
- ability to follow oral instructions and verbal cues in noisy environments
- familiarity with basic office software including word processing, email, internet access, and spreadsheets
- basic arithmetic skills
- willingness to collaborate and learn from co-workers

Job Duties
- Perform and maintain a daily inventory of bakery ingredients and complete order sheets
- monitor ingredients pricing and sales to ensure margin accuracy and to uphold commitment to high quality products at competitive prices with minimal waste
- read and follow departmental production sheets, catering orders and other written communications
- follow recipes meeting time and quality standards for finished products
- know and follow proper rotation, dating and food storage procedures
- maintain a full and attractive bakery case and bread display
- prepare diverse bakery items and breads including seasonal, local, organic ingredients catering to dietary preferences such as vegan, vegetarian, and gluten free
- meet production criteria regarding quality, quantity and timeliness of display of product
- prep recipes to be baked the following day
- maintain systems and procedures to allow easy substitution by another baker
- create accurate signage and labels for each item offered
- communicate regularly with Deli manager on equipment and supply needs
- introduce new bakery recipes and review for proper costing
- develop seasonal and holiday specialties including vegan, non-vegan, and gluten free selections
- track and fulfill bakery requests and special orders
- work with deli manager to maintain bakery sub-department, tracking costs of goods, sales and losses
- track sales of baked goods to prepare appropriate amounts based on sales traffic
- ensure all work surfaces, trays, mixing bowls and pans used in baking are cleaned and put away before break
- maintain stove, oven, sinks, prep surfaces, and equipment clean and sanitary per Department of Health standards
- daily cleaning of deli bakery case, bread display, and bakery prep area
- fill flours and restock key products, bags and boxes before depletion
- clean spills promptly and take out trash timely
- keep working area clean swept and mopped
- follow proper safety, food storage and labeling procedures
- promptly advise Food Service Manager of equipment repair or replacement needs
- provide significant attention to customers including willingness to go above and beyond expectations for all guests
- smile and greet everyone encountered
- maintain awareness of customers to ensure premier customer experience
- be positive in job performance
- take responsibility for knowing menu and understanding recipes
- recognize and communicate need for adjustments in production schedule
- maintain awareness of co-workers and their activities
- supervise and train member and substitute workers
- work effectively as part of a team and willingly offer or ask for help

- be prompt for scheduled start times and willing to work beyond scheduled hours as necessary
